There was a great turnout for the 2026 onion class held at Adobe Rock in Erda. A few dozen attendees gathered in the modern conference room and were presented with a “301 level” course in onion growing that was also accessible to beginners. Jay Cooper moderated the remote meeting with Bruce with Dixondale Farms, the largest onion grower in the United States. Bruce shared knowledge accumulated from over a hundred years of experience in growing every variety of onion imaginable on his Texan family farm.

Our area is great for growing both intermediate and long-day varieties of onions. I selected the intermediate variety pack that includes Superstar (white), Candy (yellow) and Red Candy (red) along with the Red River (long-day) starts. This is the first year I’ll try growing onions and am excited to see how the different varieties will perform.

I’ve built a 2×8′ raised bed in my garden for these onions and am hoping to fit approximately 48 spaced out 4″ in two rows. Here’s a graphic showing a suggested layout:
